Rice and Date Salad
This recipe serves: 6 people
Method of Preparation:
1. Mix in a large bowl all the salad ingredients
2. Mix in a small bowl all the dressing ingredients
3. Drizzle the dressing on the salad.
Mix slightly, refrigerate and serve.

Mix in a small bowl all the dressing ingredients.
Ingredients:
2 cups cooked white rice
6-8 dates, pitted and chopped
2 cups fresh apple, chopped into small cubes
(preferably Granny Smith or another firm tart variety)
3 slices pineapple, chopped into small cubes
3 tablespoons pine nuts
Optional: 3 tablespoons pomegranate seeds
Dressing Ingredients:
1/3 cub fresh orange juice
2 tablespoons lemon juice
2 tablespoons sunflower oil
2 tablespoons chopped fresh mint
Salt
